  Batenjein Mekleh (Fried aubergine)

2-3
       Ingredients How to?

  •  1 large aubergine

  1. Wash and peel aubergine then thinly slice. Rinse and drain sliced aubergine.
  2. Place in hot oil and deep fry till golden brown.
  3. Alternatively, brush slices with olive oil and place under hot grill till browns then turn and repeat.
  4. Serve at room temperature either on its own with pita OR topped with Lebanese Salsa as part of the mezze.
