Cauliflower  Soup

Preparation time: 10 minutes  * Cooking time: 15minutes  *Serves  6.

Ingredients How To ?
  • 250 grams cauliflower

  • 1 small chopped onion
  • 1 teacups skim milk
  • 1 teaspoon butter
  • Salt and pepper to taste
  1. Put the cauliflower, milk and 3 teacups of water in a vessel and put to boil.

  2.  When cooked, blend in a liquidizer. Strain.
  3. Heath the butter and fry the onion for minute.
  4. Add the cauliflower and liquid and boil for 5 minutes.
  5. Add salt and pepper

Serve hot. If you like, top with chopped parsley.


Health Information:
Cauliflower contains large amounts of Vitamin C and is rich in minerals. The soup also contains fibre which remains unabsorbed and gives a feeling of fullness despite the fewer calories.
