Vegetable Soup

Preparation time:   15 minutes   * Cooking time: 25 minutes   * Serves 6

Ingredients How To ?

For the Stock

  • 2 tablespoons moong dal
  • 2 onions
  • 2 large tomatoes

Other ingredients

  • 1 chopped onion
  • 1 shredded carrot
  • 1/2 teacup shredded cabbage
  • 1/2 teacup chopped spinach
  • 1 tablespoon tomato ketchup
  • 1 chopped tomato
  • 2 teaspoons oil
  • Salt and pepper to taste

For Serving

  • 3 tablespoons grated cheese

For the Stock

  1. Cut the onions and tomatoes into big pieces
  2. Add the moong dal and 6 teacups of water and cook in a pressure cooker till the first whistle
  3. When cooked, blend in a liquidizer and strain

How to Proceed ?

  1. Heat the oil and fry the onion for 1 minute
  2. Add the stock, carrot, cabbage and spinach and boil for 10 minutes
  3. Add the ketchup,  chopped tomato, salt and pepper and boil for 10 minutes 

* Serve Hot with grated cheese

Health Information: A hearty soup with an Italian flavour. The dal combined with the vegetables give the complete protein requirements. Rich in Vitamins A, C, B  and K and essential amino acids.
